What are tomatillos?

Contrary to popular belief. Tomatillos are not tomatoes and actually come from a different plant all together. They are naturally covered with a light paper like covering which should be removing before eating. Tomatillos are harvested while green and actually have a slight tart taste similar to tomatoes which is most likely why people get the, confused. 

Tomatillos are not always easy to find at grocery stores, but keep your eyes open during the summer. If you frequent Latin American markets, it may be easier to get your hands on some.

Tomatoes

Tomatoes on the other hand are less cumbersome to find. I recommended using a variety of heirloom and vine-ripened tomatoes for the most flavor. I love shopping for produce in the summer and heirloom tomatoes are such a treat.  

These tomatoes often taunt me with their brightly colored skins and sometimes odd shapes. As you can imagine, while on a recent trip to the grocery store, it didn’t take long before I had grabbed an armful of colorful beauties and proceeded to the nearest check out lane.

Pico de gallo is a great recipe especially if you’re in the mood for Mexican food. It’s fresh, quick, healthy and requires absolutely no cooking — all of my favorite characteristics when it comes to creating a summer recipe. Of course, pico de gallo can be enjoyed rather authentically with some simple tortilla chips or you can get fancy and use this recipe to dress up something like grilled chicken, seafood or steak. It’s delicious and the only thing that matters is what you’re in the mood for. Pico de gallo is the perfect party food because it feeds a crowd and doesn’t cost much to make.

But, while this pico de gallo contains tomatillos, the addition of fresh summer tomatoes gives the recipe a sweet and tart balance that can’t be beat!

Tools You Need: 

  • sharp knife
  • cutting board 
  • large bowl
  • slotted spoon – to remove homemade pico de gallo from bowl

Ingredients 

  • 6 heirloom tomatoes (or Roma tomatoes) 
  • onion 
  • tomatillos 
  • fresh cilantro 
  • garlic 
  • fresh lime juice 
  • salt 
  • jalapeno

How to Store Leftovers

Place any leftover pico de gallo in an airtight container and keep it in the fridge for 3-4 days or drain extra juice and store inside the freezer for 3 months.

Servings Suggestions 

Serve with nixtamalized corn tortillas, on top fish tacos, alongside eggs, on grilled chicken or to accompany steak.

Ingredients
  

  • 6 heirloom tomatoes (chopped)
  • 1 onion (chopped)
  • 1 cucumber (seeds removed & chopped)
  • 4 tomatillos (wrapper removed and chopped)
  • 1 bunch cilantro (chopped)
  • 1 lime (juice only)
  • 1 clove garlic (minced)
  • 1/2 jalapeno (seeds removed)
  • 2 tsp salt

Instructions
 

  • Place all chopped ingredients into a large bowl.
    6 heirloom tomatoes , 1 cucumber , 4 tomatillos , 1 bunch cilantro , 1 clove garlic , 1/2 jalapeno , 2 tsp salt , 1 onion
  • Add the juice of 1 lime.
    1 lime
  • Mix well and let sit in the refrigerator for at least 1 hour before enjoying.

Notes

This is recipe feeds a crowd (between 12-15 people), and is great for entertaining.
