Homemade Coconut Chocolate Strawberries

Easy coconut chocolate strawberries! A decadent twist on a classic treat, made at home with melted chocolate and topped with flakey coconut.

One of my favorite desserts of all time is chocolate covered strawberries. The simplicity of dipping fresh strawberries in melted chocolate just can’t be beat. The only thing better than enjoying chocolate covered strawberries is making this delicious treat at home with ingredients you control and that you trust. 

Benefits of Making Coconut Chocolate Strawberries At Home

Don’t let the elegance fool you. Chocolate covered strawberries are pretty easy to make at home. And once you get the basics down, you can customize this recipe any way you’d like. In addition, you don’t need any special equipment to make the magic happen. 

When to Make Coconut Chocolate Strawberries

While Valentine’s Day may come to mind when thinking about when to make this sweet treat, keep in mind that chocolate covered strawberries are also great for birthdays, baby showers, Mother’s Day or any other time of the year. They are also the perfect treat to make at home during strawberry season. This is a simple clean dessert. Tools Needed

OK, I’ll admit it. I’m kind of a kitchen tool nerd. But, you’ll love the fact that you don’t need any special tools to get this recipe going, not even a double boiler because you’re going to make it yourself. Here are the tools you need: 

​sheet pan 

parchment paper 

measuring cup 

small saucepan

Ingredients

strawberries (washed and patted dry) – Please use organic strawberries as strawberries have one of the highest pesticide residues known to man 

bittersweet or semi-sweet chocolate chips 

virgin coconut oil – no vegetable oil or seed oils here

unsweetened shredded coconut 

Directions 

Step 1: Line a tray or baking sheet with parchment paper. 

Step 2: Fill a saucepan with water and heat over medium heat. 

Step 3: Add the chocolate chips and coconut oil to a medium glass bowl. 

Step 4: Place the glass bowl over the pot and slowly melt the chocolate. This is how you make your own double boiler. Make sure that you’re stirring the chocolate intermittently and that the heat is not too high.

Nope. I’m not going to advocate using a microwave to melt the chocolate. We’re making functional food here.

Step 5: Once the chocolate is melted, dip the strawberries into the chocolate, making sure to gently shake off any excess chocolate. 

Step 6: Set the dipped strawberries on the lined baking tray and top with desired amount of shredded coconut flakes. 

Step 7: Transfer the chocolate-covered strawberries  to the refrigerator and chill for about an hour until the chocolate coating is set. 

Recipe Notes

Cover and refrigerate any leftover chocolate. Save to dip other treats like cut fruit or homemade marshmallows later. 

​Chocolate hardens quite quickly. For easy handling, dip strawberries while chocolate is still warm (sitting over pot of water on stove). 

Other toppings like chopped nuts can be sprinkled on the chocolate strawberries according to taste.

Storage Tips

Store leftover strawberries in covered  airtight container in between layers of wax paper.

  • 1/2 cup shredded coconut (unsweetened)

  • Add the chocolate chips and coconut oil to a medium glass bowl. 
    10 oz chocolate chips , 1 tsp coconut oil
