Ingredients in Virgin Mojito Popsicles 

  • fresh lime juice 
  • brown sugar – the addition of brown sugar gives the flavors of a classic mojito without any rum. These popsicles are alcohol-free.
  • water 
  • coconut water – Great for hydration and filled with electrolytes. While coconut water is not found in mojito recipes, the addition of coconut water replaces soda water and makes this recipe more nutrient dense.
  • fresh mint

Ingredients
 
 

  • 1/2 cup lime juice
  • 1/3 cup brown sugar
  • 1/3 cup water
  • 2 1/2 cups coconut water
  • 1/2 cup fresh mint leaves (chopped)

Instructions
 

  • Wash the mint leaves and finely chop.
    1/2 cup fresh mint leaves
  • In a medium pot combine the brown sugar and water. Heat just until simmering, stirring to dissolve the sugar.
    1/3 cup brown sugar , 1/3 cup water
  • Add the lime juice and coconut water and stir well.
    1/2 cup lime juice , 2 1/2 cups coconut water
  • Pour into popsicle molds, dividing the chopped mint evenly between them. The mint will float (once turned upside down in the molds).
  • If you have a lid for your molds, place it on before putting the sticks in. Place the sticks until 1" is protruding. If your molds don't have a lid, cover with a plastic wrap to hold the sticks in place.
  • Freeze for at least 6 hours.
  • Remove from molds by gently placing under warm running water for about 10 seconds before trying to remove.
  • Store the frozen popsicles in a freezer bag for up to a month.
