Eggless einkorn cake is a simple bunt cake recipe made without any eggs. This wholesome recipe is made with a few simple ingredients and ready for all your favorite toppings.

Ingredients Needed

Dry Ingredients

  • einkorn all purpose flour (sifted) – I bounce back and forth between these brands.
  • sucanat pr panela sugar (may also opt to use another unrefined sugar like coconut sugar or demerara sugar) 
  • baking soda

Wet Ingredients

  • kefir (room temperature) – homemade preferred, but can also use store bought 
  • butter (grass fed and pasture raised)
  • vanilla extract 

Directions (Full instructions with quantities in recipe card below) 

Step 1: In a large bowl, place all the dry ingredients. Mix together with a whisk. 

Step 2: Add all the liquid ingredients to the same bowl and whisk together until smooth. 

Step 3: Be gentle when mixing, making sure to stir in one direction. 

Step 4: Let the cake mixture sit for 20 minutes, covering it with plastic wrap or a plate. 

Step 5: Preheat the oven to 375°F/190°C.

Step 6: Prepare a pan by greasing and dusting with a little einkorn flour. 

Step 7: Next, pour the batter in the pan and bake on the center lower rack for 50-55 minutes or until a toothpick inserted in the center comes out clean. 

Step 8: Half way through baking (after about 25 minutes), place an aluminum foil on top of the cake to prevent it from burning. 

Step 9: Once the cake is ready, remove it from the oven at let cool in the pan for 15 minutes. 

Step 10: After cooling, gently loosen the edges of the cake with a knife, place a parchment paper on top of the cake pan, followed by a plate and flip upside down. Let cool for at least 45 minutes more.

  • Be sure to grease and flour the bundt cake pan well to avoid sticking
  • While the serving size for this cake is 12-16 slices, the actual number of slices you get will depend on how big you cut them.
