Overnight Raw Flaxseed Porridge with Fruits

Equipment

Ingredients
  

  • 1 raw flaxseeds (whole)
  • 2 cups water
  • 1/2 cup dates (pitted)
  • 1/3 cup walnuts
  • 4 tbsp coconut flakes (dry unsweetened)
  • 3-4 tbsp honey
  • 1 apple
  • 1 1/2 banana
  • 5-6 strawberries (rinsed and dried)

Instructions
 

  •  Add flaxseeds to a medium bowl and cover with water.

  • Cover with a plate. 
  • Let soak in the refrigerator for a least 10 hours. 
  • In a separate bowl, soak the dates just as you did the flaxseeds. (Make sure to remove any pits).

  • The next morning, put the soaked flaxseed, soaked dates with water (if you'd like you can drain and rinse first), honey, dry coconut flakes, walnuts and the fresh fruit (banana, strawberries and apple). 
  • Blend together all the ingredients until it is smooth. There should be a jelly-like consistency. Use the pulse setting first and then move to a higher speed for a few seconds. 
    2 cups water , 1/3 cup walnuts , 4 tbsp coconut flakes , 3-4 tbsp honey , 1 apple , 1 1/2 banana, 5-6 strawberries
  • Feel free to add more water for a thinner consistency. 
  • Pour into medium bowls and add any desired toppings like coconut flakes and fresh fruits like berries.

Notes

While the benefits of soaking and or spouting nuts and seeds (like flaxseed) may be well understood, the benefits of soaking dates are not as appreciated.
The reason for soaking the dates in this recipe is to make them more digestible and lend to a smoother consistency. You can skip the soaking the dates, however the flaxseeds should definitely be soaked for the best results.
Top finished porridge with additional fruits of choice.
