Overnight Raw Flaxseed Porridge with Fruits

If you find yourself too busy to make a healthy breakfast in the morning, then you’ll love this overnight raw flaxseed porridge recipe. The ingredients are simple, whole and honest, and you can make it ahead. 

As a matter of fact, if you like overnight oats recipes, you’ll want to give this recipe a try. To be honest, while oats get a thumbs up from organizations like the American Heart Foundation, oats are only as good as where the oats come from, due to the fact that the majority of oats crops are heavily treated with glyphosate

Benefits of Making Raw Flaxseed Porridge

Many traditional oatmeal recipes straddle the line between nutritious and explosively sweet. Flaxseeds don’t have a reputation for being doused in glyphosate before harvest. In addition, this raw flaxseed porridge is naturally sweetened with fruit and unrefined sugars only. Feel free to adjust the sweetener further to your likening. 

Unlike my flaxseed quinoa porridge, this recipe is served cold. That makes it a great breakfast for busy summer mornings. By the way, flaxseeds are also brimming with healthy benefits.  They are full of omega fatty acids, fiber and a great way to get some extra vitamin B1.

Ingredients

This recipe utilizes simple ingredients that you won’t feel guilty about eating. 

  • whole flaxseeds – this recipe calls for whole flaxseeds, but you’ll need to blend them (as seen in the recipe) to get the most nutritional benefits. 
  • water 
  • pitted dates 
  • walnuts 
  • dry coconut flakes (unsweetened) 
  • honey – use raw honey or try raw cinnamon honey for a different flavorful spin
  • apple 
  • banana 
  • strawberries (rinsed and dried)

Directions

Step 1: Add flaxseeds to a medium bowl and cover with water. 

Step 2: Cover with a plate. 

Step 3: Let soak in the refrigerator for a least 10 hours. 

Step 4: In a separate bowl, soak the dates just as you did for the flaxseeds. (Make sure to remove any pits). 

Step 5: The next morning, put the soaked flaxseed, soaked dates with water (if you’d like or you can drain and rinse first), honey, dry coconut flakes, walnuts and fresh fruit (banana, strawberries and apple). 

Step 6: Blend together all the ingredients until it is smooth. There should be a jelly-like consistency. Use the pulse setting first and then move on to a higher speed for a few seconds. 

Step 7: Feel free to add more water for a thinner consistency. 

Step 8: Pour into medium bowls and add any desired toppings like coconut flakes and fresh berries.

Ideas for Different Flavor Combinations

Once you have the basic recipe down, here are some easy ways to customize this overnight healthy breakfast. 

More protein: Add a scoop of sunflower seed butter for some more protein power 

Add some chocolate: Add a scoop of unsweetened cacao powder for some indulgent chocolate 

Antioxidant boost: Sprinkle with some chia seeds for antioxidant power 

Tips

While the benefits of soaking and/or spouting nuts and seeds (like flaxseed), may be well understood, the benefits of soaking dates are not as appreciated.

The reason for soaking the dates in this recipe is to make them more digestible and lend to a smoother consistency. You can skip soaking the dates, however the flaxseeds should definitely be soaked for the best results.
