In a large bowl, place all of the dry ingredients. Mix together with a whisk.
2 cups einkorn flour , 1 tsp baking soda , 1 cup sucanat
Add all the liquid ingredients to the bowl and whisk together until smooth.
2 cups kefir , 1 tsp vanilla extract
Be gentle when mixing, making sure to stir in one direction.
Let the cake mixture sit for 20 minutes, covering it with plastic wrap or a plate.
Preheat the oven to 375°F/190°C.
Prepare a pan by greasing and dusting with flour.
Next, pour the batter in the pan and bake on the center lower rack for 50-55 minutes or until a toothpick inserted in the center comes out clean.
Half way through baking (after about 25 minutes), place an aluminum foil on top of the cake to prevent it from burning.
Once the cake is ready, remove it from the oven at let cool in the pan for 15 minutes.
After cooling, loosen the edges of the cake with a knife, place a parchment paper on top of the cake pan, followed by a plate and flip upside down and let cool for at least 45 minutes more.
