Asparagus Pea Salad with Warm Potatoes & Honey

Ingredients
  

  • 16oz green peas (frozen)
  • asparagus (bunch raw asparagus)
  • 4-5 radishes
  • 8-10 baby potatoes
  • 1 onion (small and sliced)
  • 1/4 cup mint leaves (fresh)
  • 1/4 cup raw honey
  • 1 tbsp Dijon mustard
  • 3 tbsp beef tallow (gently melted)
  • salt and pepper (season to taste)

Instructions
 

  • Cut baby potatoes into bite-sized pieces.
  • Place the potato pieces on a sheet pan and toss them with beef tallow, salt, and pepper until evenly coated.
  • Preheat the oven to 350°F (180°C) and bake in the oven.
  • Roast the potatoes for approximately 20-30 minutes or until they turn golden and crispy.
  • In the meantime, prepare the peas by cooking them in a pot of boiling water for 10-15 minutes if using fresh peas. Adjust the cooking time as necessary. 
  • While the peas are cooking, thinly slice the radishes and set them aside.
  • Slice the onion and cook it in a skillet over medium heat until it becomes golden brown. Once cooked, remove the onion from the skillet and set aside.
  • In a small bowl, prepare the dressing by whisking together olive oil, salt, pepper, mustard, and honey until well combined.
  • Cut the asparagus into bite-sized pieces and cook them in a dry skillet over medium heat until they become crunchy and golden.
  • Once all the individual components are ready, it's time to assemble the salad. In a large bowl, combine the cooked peas, roasted baby potatoes, sliced radishes, golden onion, and cooked asparagus.
  • Pour the prepared vinaigrette over the salad and toss gently to ensure all the ingredients are evenly coated with the dressing. Garnish with fresh mint.
  • Serve the asparagus pea salad and enjoy as a refreshing side dish or a light lunch option.
