Fresh Spring Greens and Avocado Salad

Ingredients
  

  • 2/3 cup arugula 
  • 2/3 cup fresh spinach or lamb's lettuce
  • 10 cherry tomatoes  (sliced)
  • 9 radishes (small radishes - sliced)
  • 1/2 avocado (sliced)
  • 1 red onion (thinly sliced)
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp sesame seeds

Instructions
 

  • Place the rinsed and dried arugula leaves and other greens in a medium bowl.
    2/3 cup arugula , 2/3 cup fresh spinach or lamb's lettuce
  • Add the cut produce (radishes, onions and tomatoes) to the bowl with the greens.
    9 radishes , 1 red onion , 10 cherry tomatoes 
  • Add sliced avocado.
    1/2 avocado
  • Drizzle with olive oil and lemon juice. Season with salt and combine well.
    4 tbsp olive oil , 1 tbsp lemon juice , 1/2 tsp salt
  • Sprinkle with sesame seeds.
    1/2 tsp sesame seeds
  • Serve immediately.

Notes

Use a ripe avocado for best results. To make it mature more quickly,  put the avocado in a small paper bag with an apple in a dark place. This will help it get ripe sooner.
Eat the salad as soon as possible to preserve its freshness.
