Einkorn Chocolate Chip Cookie Bars

  • Preheat to oven to 350 degrees F.
  • Line a 9x13 pan with parchment paper or grease well.
  • In a small bowl combine flour, cinnamon, baking soda and salt. Stir to distribute and set aside.
    2 1/2 cups einkorn all purpose flour, 1/2 tsp cinnamon, 1 1/2 tsp baking soda, 1/2 tsp salt
  • In a large bowl combine butter and sugar. Whisk or beat with a hand mixer.
    1/2 cup butter, 1 cup sucanat sugar
  • Add in vanilla and applesauce and beat until emulsified.
    2 tsp vanilla extract, 1/2 cup applesauce
  • Str into the flour mixture until fully incorporated. Mixture should be thick but if too thick, add 1-2 tbsp of milk.
    1 1/3 cup dark chocolate chunks
  • Fold in dark chocolate chunks.
  • Fold into a prepared pan and spread in an even layer. As the batter is very think, it may be more simple to drop it in dollops and then smooth it. Optional: Sprinkle with flaky sea salt.
  • Bake for 21-25 minutes until golden brown and puffy.
  • Remove from oven and cool for 30 minutes. Cut into 24 pieces.

Notes

*If using a homemade apple sauce, add 1-2 tbsp/15-30ml non-dairy milk or water to thin the consistency.
For best results, wait until completely cool to cut.
**Add nuts: if desired, substitute ½ cup of the chocolate chips for an equivalent volume of chopped walnuts, pecans, or peanuts.
