Pumpkin soup with Pecans

coconut oil           garlic cloves   yellow onion        maple syrup  cinnamon            cinnamon stick  maple syrup        pumpkin puree  vegetable broth  thyme  nutmeg                salt and pepper  cayenne pepper  coconut cream  walnuts 

Ingredients

Heat a skillet over medium heat and add maple syrup, coconut oil and pecans. Cook until golden.

Remove pecans and allow to cool. Chop and set aside.

In a large pot sauté garlic and onions in coconut oil.  Add maple syrup and cinnamon stick. Let simmer until thickened. Add pumpkin puree, thyme, broth, nutmeg, cayenne pepper and salt and pepper.

Stir in coconut cream and continue to cook for another 5-10 minutes.

Using a blender, blend the soup in small batches until creamy and smooth.
