carrots                coconut flakes   almond flour       tapioca flour cinnamon            nutmeg  sea salt                egg  vanilla extract     coconut oil  apple cider vinegar  maple syrup raisins walnuts 

Ingredients

Preheat oven at 350 degrees F. In large bowl mix carrots, almond flour, tapioca flour, baking soda, nutmeg, cinnamon & salt .

In a small bowl, combine wet ingredients (egg, vanilla coconut oil, apple cider and maple syrup.  Mix well.

Step 3

Step 3

Fill a large pot with water to cover.  Add the wet ingredients to the dry and still until combined. 

Step 4

Fold in shredded coconut,   walnuts, raisins and lemon zest. 

Step 5

Using a ladle, fill prepared muffin tins 3/4 of the way.
