What You Need

Cut potatoes into quarters. Add enough water into a saucepan to boil. Sprinkle some salt.  Boil until fork tender.

As potatoes are boiling cook bacon until golden brown and crispy.

To a small bowl add olive oil, white wine vinegar and  whole grain mustard. Add salt & pepper to taste. Whisk until combined.

Add the cooked potatoes to a mixing bowl.  Add dressing and cooled potatoes. Use a spatula to combine.

Add green onion, dill, parsley and bacon.  Mix well.
