Watermelon Lime Ice (Granita)

Watermelon lime ice/granita. This is so simply and delicious. Anyone can make it.

On these hot summer days, there is nothing like a frozen treat to cool you off.  The fresh summer flavors of watermelon, lime and mint are truly refreshing. Try my watermelon lime ice and tell me what you think.

Ingredients                                             Yields 10-12

1/4 of a (seedless) watermelon

fistful of fresh mint chopped & 2 tbsp. chopped mint (keep separate)

1 1/4 cup sugar

1 1/4 cup water

1 lime

Directions

Combine sugar with water along with fistful of mint and bring to a boil until sugar is totally dissolved

Pour into a sieve to remove mint

Allow the liquid (syrup) to cool

simple syrup

Add chopped and peeled watermelon to blender and mix along with juice of one lime

Combine juice of watermelon, lime with syrup and stir in 2 tablespoons of chopped mint

Separate mixture equally into two gallon freezer bags

Place on flat surface in freezer and stir every hour making sure to break up any big chunks or ice crystals

Continue this process of stirring and re-freezing 5-8 times or until desired crystals are achieved and then freeze overnight

Once ready to serve, scrape desired ice from bag with fork and garnish with fresh mint

Tips and Tricks

Make sure to use the sweetest watermelon possible to get the best tasting Italian ice (granita)

When blending watermelon, avoid over mixing to retain a few chunks of watermelon

May freeze Italian ice in smaller plastic containers to lessen time of preparation
