Gluten Free Apple Muffins

A tasty and easy recipe for gluten free apple muffins with streusel topping. These muffins will easily become your favorite.

Ingredients

1 cup almond flour 

1/2 cup tapioca flour 

1 cup applesauce 

1/2 cup brown sugar 

1/2 tsp baking soda

1 egg (beaten)

1 tsp vanilla extract  

1/2 tsp apple cider vinegar 

1/2 cup melted butter 

1 tsp ground cinnamon 

1/8 tsp salt  

Streusel 

2 tbsp butter

2 tsp brown sugar 

1/4 cup gluten free oats 

1 tsp cinnamon 

Instructions

Preheat oven to 350 degrees F. 

In large bowl combine flour, tapioca, baking soda and salt. 

To a small bowl, add egg, vanilla, vinegar,  and mix to combine. 

Add wet ingredients to dry. 

Fill a muffin tin with paper liners and scoop muffin mixture using an ice cream scoop. 

Bake for 15-20 minutes. 

Turn off oven and leave for last 5 minutes to continue browning. 

Cool and enjoy.
