Even with the hasty school days behind us and the lazy days of summer ahead, there still may be days when you need to get out of the door quick, fast and in a hurry. And when those days come you need to prepared. Here is a warm and tasty breakfast that you can make in about three minutes in the microwave.
Ingredients Serves: 1
2 eggs (well beaten)
2 tbsp water
scallions, black pepper (as desired)
finish with your favorite salsa, cheese and sour cream
1 tortilla wrap
Place eggs in microwaveable bowl along with water, scallions, and black pepper.
Microwave on high for 1 minute
Remove from microwave and stir
Continue to cook in microwave in intervals of 20 seconds (and stirring) until desired consistency is reached
Your eggs should be fully cooked in no more than 2 minutes
Heat tortilla wrap in microwave between damp paper towels for 3o seconds
Place eggs in wrap along with scallions, cheese & sour cream
Wrap and go!
