Back-to-school is well…back! It’s time for backpacks, pencils, field trips, reports, schedules and even a little bit of back-to-school chaos.

One way you can simplify the back-to-school routine is by making easy to prepare meals during the week like my Make it Your Way Taco Bar.

Taco’s are not just for weekend fun. Try implementing “Taco Tuesdays” in your home for a quick and tasty back-to-school meal with a whole lot of fun.

Just brown ground beef, turkey or seafood of your choosing with your favorite taco seasoning. I like to make a simple mix of salt, chili powder, cumin, garlic powder and paprika. This time, I am changing things up a bit and making shrimp tacos marinated in the same taco seasoning with some cilantro paste. No exact measurements, just a little bit of each.

Prepare the taco shells before filling by warming at 325° for 10 minutes. Let the kids decide what toppings they would like to add to their tacos and just go for it. A selection of cheeses, herbs and veggies are a good start. Kids love having a hand in preparing their own food.

Today, I am using Old El Paso Hard & Soft Taco Kits and our toppings are fresh corn, cilantro, broccoli, red onions, green onions, queso fresco, grilled pineapples, salsa and tomatoes.

So yum and so simple too! You know what else is simple? Box Tops for Education™.
