Scrumptious Weekend Recipe and Raw Food Reboot

I have been down for the last few days.  I caught the stomach flu and am slowly getting back into the swing.  Since I am taking things slow, I decided to start my weekend with a raw food recipe.  It is actually quite good.

Carrot Ginger Soup
10 carrots
1 green apple
1 avocado
1/2 teaspoon salt
1/2 teaspoon chopped ginger
1/4 tsp. allspice
Juice from 1/2 a lemon

I can’t take credit for this one.  I found the recipe on RawGuru. The fancy pictures however, are my own. Just blend all the ingredients together (excluding avocado) and your meal is complete.  I actually used my juicer to make things simple and reconstituted the pulp back in. Enjoy!

    Sounds good… If you r not blending the Avacado, is it added at the end or eaten on the side?

    I added it as a garnish (edible garnish of course). I could not bare to blend it. I love avocado. Oh yes, and I added the apple to the ingredient list.

    Hmmm.. Sounds interesting. Why couldn’t you bare to add the avocado to the mix. Just curious.

    @curlyqueise, I really like the texture of avocado by itself. Adding it to the mixture (in my opinion), would hide its unique texuture. Ok, the foodie in me is coming out.
