Sausage and peppers have always been a family favorite. Just take a look at this old sausage recipe from the archives. But in this version, I gave classic sausage and peppers a modern day healthy spin.
Cutting the sausage, peppers and onions first and cooking them on skewers, dramatically cuts down on the cooking time. If you use wooden skewers, then soak them for at least 30 minutes prior to cooking.
Not only does the flavor of the sausage pair well with the sausage but, sweet peppers pack a big vitamin C punch! You can find about more vitamin rich foods by watching this video below.
Use metal skewers if you’d like to skip that step all together. Go to the organic market and get the best organic sausage you can. Obviously you can swap the pork sausage out for chicken sausage, chicken or shrimp if you wanted.
If you decided to use the shrimp then you would most likely shave off another 10 minutes on cooking time.
I paired the sausage skewers with cilantro cauliflower rice for a low carb, high protein meal that’s big on flavor. And don’t worry, the cauliflower rice only takes about 15 minutes to make. You can prepare it while the sausage kebobs are in the oven.
Trust me when I say, that this is the no fuss meal that you want to make. In fact, these sausage skewers are so easy to make, I took them on the set with me on Good Morning Washington. Whether you want to call them sausage kebobs are skewers, this stuff is good.
Just make sure to add the cherry tomato on the skewer after cooking so that it doesn’t shrivel.
Sausage & Pepper Skewers-Dinner in 25 Minutes
These sausage and peppers skewers are great for dinner and will ready in 25 minutes or less.

Ingredients
Pork sausage
various bell peppers ( I used red and yellow)
red onions
cherry tomatoes
coconut oil spray or other preferred oil
Instructions
Preheat oven to 400 degrees Fahrenheit.
Slice sausage and cut veggies (peppers and onions) into bite sized pieces.
Place onto skewers.
Spray broiler pan with coconut oil and cook for 20 minutes turning half way in between.
Top with cherry tomato once cooking is complete.

* If using wooden skewers soak first for about 30 minutes.
