Roasted Beets with Green Beans and Parmesan

Need an idea for a simple, healthy and tasty side dish.  Give my roasted beets a try.  I promise, they are great!


2 Beets
(1 handful) fresh green Beans
1-2 tbls. olive oil
Black pepper
Kosher salt
Parmesan cheese (as desired)

Preheat oven to 350 degrees F.

Peel and cut beets.

Toss with half the olive oil.

Sprinkle with salt, cheese and  pepper as desired.

Cook for approximately 35-45 minutes or until beets are tender.

Add green beans to the roasted beets in the oven during the last 10 minutes of cooking.  Add remaining olive oil and cook until beans are still slightly crisp.

Even if you have not tried beets, you need to try this.
