Vanilla Spiced Pumpkin Oatmeal

My family loves oatmeal. There is nothing like a hearty bowl of vanilla spiced pumpkin oatmeal to get you started in the morning. The fresh pumpkin and yummy vanilla in this morning starter is delicious and is sure to fill you up!

Vanilla Spice Pumpkin Oatmeal

 

Ingredients                                                                            Serves 2-4

ingredients for pumpkin oatmeal

1 1/2 cups fresh pumpkin

2 cups whole rolled oats

3 cups almond milk

2 tbsp. vanilla extract

2 sticks cinnamon

2-3 tbsp. sugar

1 pinch sea salt

 

Directions:

Simmer pumpkin, cinnamon, sugar and salt on medium low heat until pumpkin is tender

Add oatmeal and simmer for an additional 5-10 minutes until desired consistency

Enjoy! Simple and delicious.

  1. I have to admit that I’m not a big oatmeal fan, however, I do go through phases when I eat it like crazy….then it’s years before I touch it again…this looks so delish I think a “phase” is about to hit! 🙂

    1. That’s too funny Anna. The opposite is true over here. I probably eat it around 5 times a week. As a result, I get get really creative with lots of tasty combinations.
