This beverage is perfect for a warm spring or summer day. The hot sunshine is perfect for this pineapple ginger juice. A friend of mine recently mentioned the concept of boiling pineapple peel to make a beverage and I was intrigued and decided to make a version myself.

We use fresh pineapples around here all the time, so last time we had one I simply kept the peel and the core and stored them in the freezer. The core pineapples actually have one of the highest concentrations of bromelain.

Bromelain is a naturally occurring enzyme in pineapples. The enzyme is are highly anti-inflammatory and is even used as a digestive aid and in congestion relief.

I have to say, that every time I make this pineapple drink, I feel like I am beating the system.

It sounds so silly but the fact that only the top part of the pineapple is tossed, makes me feel really good. I suppose you could plant it, depending on where you live. But there’s hardly any waste here.

How to Make Pineapple Ginger Juice

To this version I added pineapple peel, ginger, cinnamon, water, sugar and boiled for a bit. Yeah, that’s pretty much how it happened.  After that, the rest is just magic.

About how much liquid should be left after boiling? I am thinking about making this recipe using an instant pot.

I haven’t tried it in an instant pot, but would estimate between 4-6 cups. Let me know how that turns out!
