The best way to use up fresh summer peaches. You won’t regret it. Makes 6-8 pancakes


  • 1 cup All-purpose flour (sifted)
  • 1 cup buttermilk
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1 egg
  • 1 whole peach purèed (pit removed)
  • 1 tbsp. melted butter (unsalted)
  • 2 tsp sugar
  • 2 tsp vanilla
  • zest of one lemon
  • 1 tbsp. oil for griddle (wiping off excess)


  1. Preheat griddle to medium heat
  2. Whisk together dry ingredients
  3. In separate bowl mix together (milk, egg, vanilla, butter, peach and lemon zest)
  4. Add wet mixture to dry ingredients
  5. Blend together well
  6. Use a ladle to portion out each pancake and cook on griddle
  7. Serve alongside sliced peaches, whipped cream and maple syrup


Use a ladle to ensure perfectly round pancakes. Works like a charm every time.
