Peaches and Cream Pancakes

Peaches and cream go hand in hand. Just like peanut butter and jelly… ketchup and mustard…fish and chips. Ok, maybe I am hungry, but you get the point. There is nothing like fresh peaches during the summer. And that was the sole inspiration behind this recipe. Then again, my family and I just LOVE pancakes.

This is what you need for the pancakes:

1 cup All-purpose flour (sifted)

1 cup buttermilk

1 tsp baking powder

1/4 tsp cinnamon

1 egg

1 whole peach purèed (pit removed)

1 tbsp. melted butter (unsalted)

2 tsp sugar

2 tsp vanilla

zest of one lemon

1 tbsp. oil for griddle (wiping off excess)

garnish: freshly sliced peaches

Directions Preheat griddle to medium heat. Whisk together dry ingredients. In separate bowl, mix together (milk, egg, vanilla, butter, peach and lemon zest). Add wet mixture to dry ingredients. Blend together. Use a ladle to portion out each pancake and cook on lightly greased griddle. Serve alongside maple syrup, sliced peaches and a generous dollop of whipped cream. Enjoy your peaches and cream!

The best way to use up extra summer peaches. You won't regret it. Makes 6-8 pancakes.

Ingredients

Notes

Use a ladle to ensure perfectly round pancakes. Works like a charm every time.
