Why Raw Honey Lavender Ice Cream
If you’re looking for an honest ice cream recipe made with traditional ingredients then this is the one. Modern day store ice cream is a far cry from what ice cream used to be and should be.
This recipe is made with just five simple nourishing ingredients. The ingredients are in their most natural form to facilitate nourishment and vitamin assimilation. If any of that is “not your jam”, then this is not the recipe for you.

Lavender Honey Ice Cream Recipe (Ingredients)
Like any good recipe, the ingredients in this homemade ice cream are the star of the show. This recipe is made with all farm fresh natural ingredients. I recommend that you get to know the local farmers near you.
raw heavy cream – Using raw cream from pastured cows make this ice cream extra creamy and delicious.
egg yolks – You need egg yolks for to create more of a custard base. Get the best eggs that you can. I recommend getting eggs from 100% pasture raised chickens that have been fed a corn free, soy free diet. This is especially important due to the fact that the eggs yolks are not tempered in this recipe.
If you’d like temper the egg yolks before making the ice cream, just warm the milk so that’s not boiling and slowly beat in one egg yolk (one at a time), so that they don’t curdle.
culinary lavender – Use food grade culinary lavender for a light floral taste
salt – Added to balance flavors. Also lowers the freezing point of the ice cream mixture to make a creamy product. This is the salt I use in most of my recipes.
honey – Local honey (raw) is the only sweetener used. You can typically get this honey from local farmers markets near you.
Why Put Lavender in Ice Cream
Lavender and honey in homemade ice cream are a match made. Not only does does the purple flower add a mild flavor of fresh blossoms that is perfect for summer, but lavender is full of nutritional benefits. Make sure to use culinary lavender versus French lavender so that your ice cream doesn’t take like a bar of soap.
Is Raw Honey Lavender Ice Cream Healthy?

Not only is raw honey ice cream healthy, I would argue that this is some of the most nutrient dense ice cream there is. Maybe, we’ll get to some of those points in another book. But, listed below are some the benefits of this tasty summer treat.
Raw Milk: Successfully used for thousands of years, it’s only in the last 100 years or so, that this ancient food has been stigmatized. As a matter of fact, the consumption of unprocessed, unheated milk is consistently associated with decreased allergies, hay fever and asthma. In fact, even the pathogenicity of clean natural milk is suppressed due to it’s composition and protective microflora.
