This week had a “shaky” start thanks to an earthquake and now it is about to have a “soggy” end thanks to hurricane Irene. What is happening on the east coast?!?
One thing I won’t have is an empty stomach as I wait for “Irene” (as I like to call her), making her debut in the day to come. Inspired by my desire to have a refrigerator with as little as produce as possible (in case we lose electricity), I created this delicious salad.
Everything but the Sink Salad
1 hard boiled egg
1 head of romaine lettuce
1/2 avocado sliced
1 carrot, peeled and sliced
1 handful of cherry tomatoes
2 slices of deli turkey
Garnish: croutons, black pepper
Wash and dry lettuce. Tear into bite sized pieces. Add egg, carrot, tomatoes, turkey and avocado. Garnish with black pepper and croutons as desired. Serve with your favorite salad dressing.
Yields: 1 serving for “one hungry mama”
