Moist Einkorn Apple Cake

Einkorn apple cake is a fragrant and moist cake made with sliced apples, sticky molasses and warming spices. This clean-eating recipes is a perfectly delicious way to use up fresh apples. 

​What is Einkorn Apple Cake 

Einkorn apple cake is a delicious recipe made with all-purpose einkorn flour, crisp granny smith apples and delicious spices. If you’re looking for a clean-eating recipe with some of the flavor notes of apple pie, then this would be it. 

What is Einkorn Flour?

Einkorn flour is an ancient grain that has been around since the beginning of time. More specifically, einkorn is the most ancient flour (from which other flours) like spelt, durum flour and modern wheat, were derived. But unlike modern wheat, einkorn flour has not been genetically modified or manipulated. This ancient variety of wheat, which comes from einkorn berries, has remained unchanged throughout history. 

There is something incredibly powerful about knowing that you are feeding your family with unadulterated food that literally built ancient civilizations. As a result of the robust nutrition and simplicity of the gluten in einkorn wheat, there is minimal gluten sensitivities and an increase in both vitamins and minerals. As a matter of fact, people with gluten sensitivity have had immense success using einkorn flour. 

Einkorn flour also has a rich flavor and higher protein content than modern wheat. Due to these superior qualities and success with using einkorn in my own family, I am now using einkorn flour in many of my older recipes and in new recipes moving forward. 

What Make This Cake So Good 

If you’re going to eat something, not only should it taste good, but ideally, it should be good for your body too. This cake is made with simple ingredients that your body can recognize as real food. It’s also a good option if you’re looking for an alternative to apple pie, need to use up some fresh apples, or are doing some fall entertaining. 

Delicious Ingredients Needed For Einkorn Apple Cake 

molasses – I’m using blackstrap molasses in this recipe. Blackstrap molasses has more minerals, is thicker than “regular” molasses, lower in sugar and is slightly bitter in flavor. Don’t worry. It all balances out. 

sucanat – Used to provide natural sweetness. Sucanat is unprocessed cane sugar. It has a similar taste, but contains more minerals than brown sugar. And I don’t know about you, but I’m all about the minerals.

unsalted butter – This recipe calls for real unsalted butter from pasture raised, grass fed cows. Melt first for easy mixing. 

milk – I use non-homogenized raw milk. Whether you use raw milk or not, the point is you should be getting grass-fed pasture raised dairy from a trusted source. If you are unable to do that, opt for organic milk from grass fed cows or unsweetened nut milk. A quick caution: most nut milks on the market are mostly water. So make your own or you’re going to have to do some serious research. 

ground ginger – Adds warmth, depth and a slight gingerbread flavor.

nutmeg – Takes the flavor up a bit more. 

cinnamon – A classic warming spice that adds incredible flavor. 

salt – Enhances flavor of the other ingredients. This is the salt I use. It’s minimally processed and free from toxins. 

einkorn all purpose flour – einkorn flour comes in two varieties, whole wheat einkorn flour and multipurpose einkorn flour. Use multipurpose einkorn flour for this recipe. Either of these brands will work: Organic Grand Teton Ancient Flour or Organic Jovial Einkorn Flour 

baking powder – leavening agent that helps the cake rise.

granny smith apples – The flavor of the apples are what makes this a great recipe. The apples make up the majority of the recipe. They are first cut into thin slices which make for a moist texture during baking. 

How to Make This Moist Einkorn Apple Cake 

Step 1:  Preheat oven to 350 degrees F. 

Step 2: Grease a 8 in’ round cake pan and and line the bottom with parchment paper. 

Step 3: Core the apples (using an apple corer is possible) and slice into 1/4 inch pieces. 

Step 4: Warm the molasses until just hot. 

Step 5: Add the milk. Whisk until smooth.

Step 6: Combine in a large bowl with sucanat sugar and melted butter.

Step 7: Whisk until the sugar is melted. 

Step 8: Stir in ground cinnamon, nutmeg and salt. 

Step 9:  Add in the einkorn flour (a little at a time) and baking powder and stir until smooth. 

Step 10:  Fold in the apples until well coated. 

Step 11: Spread the batter into a prepared pan (will be a bit thick). Spread to level out. 

Step 12: Bake for 45-55 minutes until firm on top and toothpick inserted into the center comes out clean. 

Step 13; Allow to cook completely before unmolding and removing from pan. 

Step 14: Enjoy the same day. Leftovers can be storied in the fridge for up to 3 days. Note: Cake will get stickier and moister as it sits. 

Tips and Tricks

  • This cake is very moist and sticky, you should allow to cool completely before enjoying (at least 2 hours).
  • Can use sucanat sugar or raw coconut sugar.
  • Granny Smith apples are highly recommended as they are both tart and cook well. 

How to Serve Leftovers of Einkorn Apple Cake

Once you remove from the refrigerator, I find that leftovers taste better when reheated in the toaster oven at 300 degrees F for 15 minutes.

Serve with a cup of homemade molasses milk .

  • Peel and core apples. Slice into quarters and then 1/4" pieces.
    1 pound tart apples
  • Warm molasses until just hot. Combine in a large bowl with the sucanat sugar and melted butter.
    1/4 cup blackstrap molasses, 3/4 cup sucanat sugar, 1/2 cup unsalted butter
  • Whisk until blended.
    3/4 cup milk
  • Add the milk, Whisk further until smooth.
  • Stir in ground ginger, cinnamon, nutmeg, salt.
    2 tsp ground ginger, 1/2 tsp ground cinnamon, 1/2 tsp nutmeg, 1/4 tsp salt
  • Add in the flour, and baking powder. and stir until smooth.
    2 cups einkorn all-purpose flour, 2 1/2 tsp baking powder
  • Fold in the apple slices until well coated.
  • Spread the batter into a prepared pan and spread to level.
  • Bake for 45-55 minutes until the top is firm.
  • An inserted toothpick should come out clean.
  • Allow to cool completely before unmolding.
  • Best when enjoyed the same day. Can be stored in the refrigerator for up to 3 days.
