Turn what you know about apple pie on it’s head and try this recipe for skinny apple pie. Believe it or not, this “apple pie” recipe is grain free with no added sugars.

It’s autumn all right. And no matter what part of your wellness journey that you’re in, this time of year conjures images and smells of fresh baked apples, homemade applesauce and apple pie. But what about if you don’t want all those calories? What if you want something healthier or different? Enter these delicious deconstructed skinny apple pies.

It will turn what you know about apple pie recipes on it’s head.  This recipe is light, airy crispy and have all the flavors of fall. Apples, cinnamon, nutmeg, raisins and all the yums. I used a balanced mixture of honey crisp and green apples for a combination of tangy and sweet. But you can use any combination that you want.

For the crust, I used the gluten free almond wraps. You can also use corn tortillas. Sprayed them with coconut oil spray and inserted them into muffin tins to make these cute portable “pies”.

Not only is this recipe great for fall but, these mini skinny apple pies are perfect for Thanksgiving and the Christmas holidays too. Just so you know,  mini skinny apple pies are kid approved. These pies are topped with a dollop of coconut whipped topping to keep things dairy free. You can also use regular whipped cream if you like.

So for 20 minutes in the kitchen here’s what you get…a grain free, tasty, healthy and no added sugar-free apple pie recipe. Yeah baby! Come get some.

Mini Skinny Apple Pies

Ingredients

1 honeycrisp apple

1/2 green apple

6 almond flour wraps

3 tbsp raisins

2 tbsp maple syrup

1 tbsp melted butter

1 tsp ground cinnamon

1/2 tsp vanilla

Juice of 1/4 fresh lemon

1/4 tsp ground nutmeg

fresh mint

Instructions

Preheat oven to 350F.

Core and dice apples and place in bowl.

Melt butter and toss gently.

Add lemon juice, maple syrup, cinnamon, nutmeg, vanilla and raisins.

Mix and set aside to marinate for at least 10 minutes.

Lay wrap on flat surface.

Invert the rim of a glass on the wrap an gently cut out circle shape.

Spray both sides with coconut oil spray.

Remove cut circle and gently press into muffin tins.

Bake the “pie shells” for 12 minutes or until evenly brown.

Pie filling can be placed in a separate aluminum covered glass dish or pie pan and baked at the same time.

Remove both from oven.

Use a spoon to gently spoon filling into baked shells.

Garish with fresh mint and whipped coconut cream as desired.
