I know, I know…It has been a while since I posted a recipe. I was talking to a friend today and she reminded me of how I still have a love affair with food (Thanks Trace!) I enjoy preparing it in delightful and usually healthy ways. (If I am good at least).
Here is my take on a:
Tuna Mediterranean Salad
Bunch Red leaf lettuce
1 can tuna drained well
1 handful of olives ( rinsed &halved)
Sliced tomatoes (oops., forgot to put in the pic)
scattered capers and feta cheese (as desired)
2 well drained anchovies (to garnish-don’t judge me)
3 tbls extra virgin olive oil
1 tbls red wine vinegar
1 clove finely minced garlic
1 tsp. dried oregano
1 pinch course salt
fresh cracked pepper (as desired)
Add washed lettuce to plate and add tuna, olive, tomatoes, capers and feta cheese. Add the other ingredients for the salad dressing to the food processor and blend well until creamy. Drizzle the dressing on top of the salad. I find that 1.5 tablespoons of dressing is suffice for one salad. So you can make 2 salads from this batch. Add the anchovies for garnish and you are well on your way to the Mediterranean.
