Initially, I wasn’t sure how I was going to prepare the shrimp. But then I decided on taking things back to my island roots and currying it. I paired the curry shrimp with mashed plantains. If you haven’t had mashed plantains let me just tell you…it will change your life.

And the way that the plantains just paired so nicely with plump shrimp, only fungi could be better. It was the perfect way to sop up all that creamy spicy saucy goodness.

Again, cooking times will vary but, I would say don’t cook these more than three minutes…five minutes max.
