I mean, who needs an excuse to have some mashed potatoes right? What makes things even better, are that these mashed potatoes are extra nutritious thanks to the addition of greens like kale.

The recipe includes simple and honest ingredients. Here’s what you’ll need to make this recipe:
- potatoes
- chopped kale
- green onions
- milk (Use the best quality milk you can get. I use raw milk).
- nutmeg
- butter
- salt
- pepper
Instructions
Step 1: Peal and wash the potatoes. Cut into cubes.
Step 2: Place them into a saucepan and cover with cold water.
Step 3: Add half the salt and boil for 20 minutes or until tender.
Step 4: Melt half of the butter in a skillet.
Step 5: Add the chopped white part of the green onions and sauté for a few minutes.
Step 6: Next, add the chopped kale and cook until tender and it just turns bright green.
Step 7: Once fully cooked, drain the potatoes.
Step 8: To a small saucepan warm milk, nutmeg, salt and pepper.
Step 9: To the drained potatoes, add half the milk mixture.
Step 10: Mash the potatoes, adding the remaining milk gradually, to the potato mixture, until you get a smooth consistency.
Step 11: Stir in sauteed kale with the remaining green part of the green onions.
Step 12: Mix well and taste, adjusting the salt and pepper as desired.
Step 13: Serve with remaining butter and more chopped green onions.
Variations
Try adding fresh herbs like thyme and basil.
Swap out the the kale for any other green vegetable you like. Broccoli and spinach are also great options.

- 3/4 cup milk (whole milk)
- 2 pinches nutmeg (grated)
- 4 tbsp unsalted butter (divided)
- 2 tsp salt (divided)
- 1/2 tsp black pepper
