I created a “party in your mouth” kind of recipe and it’s as simple to make as can be. But this is just not any chicken quinoa salad, it’s the kind that will impress your family and guests. It’s so colorful and there is lots of flavor in every bite.
I first conceptualized the recipe at a Perdue event (as a Perdue Influencer). We had an “Iron Chef” competition and broke into small teams, there were only 20 minutes to look at the ingredients and come up with an idea. The idea hit me pretty quickly. So my confetti chicken quinoa salad was born!
We made it. The people devoured it and the confetti chicken quinoa salad was a hit.
After all the adrenaline of the “Iron Chef” competition wore off with my teammates, I decided to replicate the chicken quinoa salad recipe at home. I didn’t initially write down the ingredients for salad but, it was really easy to replicate the meal just by looking at pictures. As you can see, the fresh ingredients shine through.
When you start with quality ingredients, it’s really hard to prepare a bad tasting meal. That’s why this recipe works so well. The star is the Perdue Harvestland diced chicken breasts.
Perdue Farms just launched their direct to consumer line that allows you to get items like their Harvestland chicken breasts shipped directly to your door. Besides their premium line of organic chicken, other meats like lamb, premium beef, grassfed, heritage breed, pasture-raised, pork are also available.
Perdue line of premium meats are always antibiotic-free. I had the privilege of taking a farm tour recently and talking with Jim Perdue himself. It’s clear to me that the company has worked hard at being a leader and innovator when it comes to their caliber of meats and offerings.
The fact that their Perdue Farm products are even more accessible now via their direct to consumer website is a win for me. It’s quality and convenience delivered to your doorstep. Life has been really busy for me lately so I can’t be mad at that.
I’ve tried online grocery shopping through some grocery stores before but, when it comes to meat and poultry, sometimes I feel like the quality is sub-par.
The website allows you choose from their bundles or create your own custom package.
To suit my needs, my preference is the Perdue Farms Organic Bundle. In that bundle you’ll get:
Perdue Harvestland Whole Organic Chicken
Perdue Harvestland Organic Chicken Breasts
Perdue Organic Chicken Breasts and more…

The diced chicken breasts is what I used for the confetti quinoa salad recipe. The chicken was tender, quick-cooking and really helped to make this recipe a 30 minute meal.
