Make this Confetti Chicken Quinoa Salad

I created a “party in your mouth” kind of recipe and it’s as simple to make as can be. But this is just not any chicken quinoa salad, it’s the kind that will impress your family and guests. It’s so colorful and there is lots of flavor in every bite.

I first conceptualized the recipe at a Perdue event (as a Perdue Influencer). We had an “Iron Chef” competition and broke into small teams, there were only 20 minutes to look at the ingredients and come up with an idea. The idea hit me pretty quickly. So my confetti chicken quinoa salad was born!

After all the adrenaline of the “Iron Chef” competition wore off with my teammates, I decided to replicate the chicken quinoa salad recipe at home. I didn’t initially write down the ingredients for salad but, it was really easy to replicate the meal just by looking at pictures. As you can see, the fresh ingredients shine through.

Confetti Chicken Quinoa Salad

Confetti Chicken Quinoa Salad

A healthy recipe for chicken quinoa salad that can be enjoyed any time of year. 

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 2 cups quinoa (cooked according to package instructions)
  • 1 pound skinless chicken breast
  • 2 cups green olives (pitted and drained)
  • 1 pint grape tomatoes (cut in half)
  • 1/2 red pepper (cut in short strips)
  • 1 yellow pepper (cut in short strips)
  • 1 large red onion (sliced in 1/4 in rounds)
  • 1/2 seedless cucumber (chopped)
  • 3 tbsp fresh basil (strips)
  • Dressing
  • 1 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp dry Italian seasoning
  • 1/2 tsp salt
  • 2 cloves garlic (chopped)
  • 1/2 tsp fresh cracked black pepper

Instructions

Add 2 tbsp ghee or oil to grill pan and preheat. 

Season diced chicken with adobo or poultry seasoning and salt. 

Brown chicken on all sides until cooked through on medium high heat.

Using grill pan, grill red onions and peppers in batches, adding more ghee between batches if needed.

In food processor, add red wine vinegar, salt, minced garlic and Italian seasoning. 

While the food processor is on, slow add 1 cup of olive oil.

Mix the dressing well and set aside. 

In large bowl add the cooked quinoa. 

Add the peppers, onions, grape tomatoes, olives, cooked chicken, basil, tarragon and prepared dressing to the large bowl and toss to evenly distribute.

Serve at room temperature or chill for two hours.

Garnish with grilled lemon as desired.
