I created a “party in your mouth” kind of recipe and it’s as simple to make as can be. But this is just not any chicken quinoa salad, it’s the kind that will impress your family and guests. It’s so colorful and there is lots of flavor in every bite.
I first conceptualized the recipe at a Perdue event (as a Perdue Influencer). We had an “Iron Chef” competition and broke into small teams, there were only 20 minutes to look at the ingredients and come up with an idea. The idea hit me pretty quickly. So my confetti chicken quinoa salad was born!
We made it. The people devoured it and the confetti chicken quinoa salad was a hit.
After all the adrenaline of the “Iron Chef” competition wore off with my teammates, I decided to replicate the chicken quinoa salad recipe at home. I didn’t initially write down the ingredients for salad but, it was really easy to replicate the meal just by looking at pictures. As you can see, the fresh ingredients shine through.

Confetti Chicken Quinoa Salad
A healthy recipe for chicken quinoa salad that can be enjoyed any time of year.

14 oz (approx) quinoa (cooked according to package instructions)
1 pound Perdue Harvesland diced chicken breast
1 bottle each Mediterranean olives (one bottle each green & red cut in halves)
1 pint grape tomatoes (cut in two)
1/2 red pepper (strips)
1 yellow pepper (strips)
1 large red onion (sliced in 1/4 in rounds)
1/2 seedless cucumber (chopped)
3 tbsp fresh basil (strips)
1 tbsp fresh tarragon (torn)
1/2 tsp sea salt
1/4 tsp Adobo or poultry seasoning
1 –2 tsp oil (sunflower or other for sauteeing)
*1 lemon cut in half for garnish
3/4– 1 cup olive oil
3 Tbsp red wine vinegar,
2 tbsp dry Italian seasoning
1/2 tsp sea salt
2 cloves minced garlic
1/4 tsp fresh cracker pepper
Add 1-2 tsp of oil to grill or saute pan to preheat.
Season diced chicken with adobo or poultry seasoning and salt.
Brown chicken on each side until cooked through.
Next, grill red onions and peppers on both sides, adding more vegetable or canola oil if needed.
In small bowl, add 3/4 cup of olive oil, red wine vinegar, salt, minced garlic and Italian seasoning.
Mix the dressing well and set aside.
In large bowl add the cooked quinoa.
Add the peppers, onions, grape tomatoes, olives, cooked chicken, basil, tarragon and prepared dressing to the large bowl and toss to evenly distribute.
Serve chilled or at room temperature.
Garnish with grilled lemon if desired.
