One of the things you have to have during the Thanksgiving and Christmas Holiday is a roasting pan with a rack.
First of all, you need a pan that is big enough to accommodate the turkey, ham, roast that you are cooking. Secondly, the addition of a rack allows air to surround the turkey so that it can cook evenly. In addition, to avoid “soggy skin” on the bottom of the turkey, it’s best to not have the turkey sit at the bottom of the pan.
Put veggies and herbs at the bottom of the pan instead. The juices that drip from the bottom of the turkey will mix with the vegetables and give you a “head start” on a tasty gravy.
