Pectin is a substance helps to give food a thick consistency.
And while pectin can be found naturally in apples and the peels of citrus fruits like lemons and limes, commercial pectin is likely to include preservatives, and residual solvents that were used during commercial extraction.
Traditional jam recipes (specifically from the 1800’s and before) did not contain commercial pectin. It’s easy to thicken homemade jam using more fruit and lemon or citrus peels if necessary. But, to add even more nutritional value to this honey strawberry chia jam recipe, I use chia seeds.

Ingredients

- strawberries -Of course, you need strawberries. Feel free to swap them out for any other fruit you like.
- chia seeds – An easy way to get that “jammy” texture without using pectin
- vanilla extract – Optional ingredient that ads a smooth flavor
- honey (optional) – Adds a touch of additional sweetness. Can also use cinnamon honey for added flavor.

Honey Strawberry Chia Jam
Equipment
Ingredients
- 2 cups strawberries (can use fresh or frozen
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1 tbsp honey (optional – for additional sweetness)
Instructions
- In a small pot over medium high heat, add strawberries and heat for 5-10 minutes until they become soft and release their juices.2 cups strawberries
- Break them apart using a using a masher or immersion blender, depending on the consistency that you would like.
- Remove the mixture from heat, add chia seeds, vanilla and 1 tbsp of honey.1 tbsp chia seeds , 1 tbsp honey , 1 tsp vanilla extract
- Mix all the ingredients together and pour into a glass jar.
- Refrigerate for at least 1 hour before serving.
- Serve over ice cream, on toast, bagels, waffles pr pancakes.
