Herbs have been used since ancient times. As a matter of according to the Herbal Academy, the first documented use of herbs was in Mesopotamia around 1500 BCE. Over 850 herbs were listed! Unfortunately, we don’t use as many herbs in our lives today but, that needs to change. Healing herbs like thyme, basil, lemongrass, cilantro and basil have true medicinal properties. Personally, I just don’t use herbs in my cooking, I use them as much as I can in drinks and beverages too. One of the ways, to use fresh herbs every morning is in something known as “bush tea”. Well, at least that we call it in the Caribbean. I’m not sure why we don’t call it herb tea.

But basically what you do is gather some fresh organic herbs and cover in a pot of fresh filtered water. Bring to a boil and remove from heat. The herb tea or bush tea making process shouldn’t take more than 15 minutes.

Lemongrass is great herb to use for making bush tea. Often times it is combined with other herbs like basil, rosemary and sage to make a healthy harmonious blend that is a powerful at reducing inflammation.
