I love mornings. But the truth is, lately mornings around here have been a bit of a drag. Running a home business with small kids in tow while homeschooling is quite the balancing act. Even so, on special days like Easter, a little bit more effort goes into making Easter breakfast or Easter Brunch special.
Egg and ham breakfast cups are one of those simple to make breakfasts that is beautiful to look at and hence great for entertaining. That’s what makes it a perfect choice for Easter morning. Some of my other breakfast ideas that are great for entertaining are vanilla chia pudding and mini egg frittatas. Don’t worry, these recipes are also gluten and grain-free and generally good for you too.
These egg and ham breakfast cups are so easy to make and have a great “wow” factor with minimal effort.
All you need are some eggs, ham and muffin tins and you are ready to go. Load these breakfast cups with any goodies you like but, I like the simplicity of the ham, eggs and chives.

Ham and Egg Breakfast Cups
A quick and impressive breakfast are egg and ham cups, made with just 3 ingredients, for busy mornings or entertaining a hungry crowd.
- Prep Time: 5 mins
- Cook Time: 15 mins
- Total Time: 20 mins
- Yield: 6-12 1x
- Ham (black forest ham preferred)
- salt and pepper
- non-stick cooking spray
- Preheat oven to 350 degrees
- Spray muffin pan with non-stick cooking spray
- Line each muffin tin with one piece of ham
- Carefully crack one whole egg in each muffin section
- Add chives and season with salt and pepper as desired
- *Use one egg and slice of ham per person for desired number of servings
