Can be stored covered in the fridge for up to 5 days. Allow to warm slightly before serving as the olive oil will solidify when cold.
Green Onion Chimichurri

A healthy gluten free and nut free recipe for green onion chimichurri that you'll want to put on everything.
Ingredients
- 3 medium green onions
- 1/2 cup packed parsley leaves
- 6 tbsp olive oil
- 1/4 cup red wine vinegar
- 1 medium jalapeno
- 3/4 cup cilantro leaves with stems
- 4 cloves garlic
- 1/2 tsp salt
Instructions
- Peel and finely mince the garlic.
- Chop the green onions (both the white and green portions)
- Slice the top off the jalapeno and mince. For a mild chimichurri, omit the seeds.
- Give the cilantro a rough chop.
- Combine everything in a food processor and pulse several times on low until everything is finely chopped, but not blended. (You can also do this by hand, chopping the cilantro and parsley finely, and combining all the solid ingredients on a cutting board and cutting until desired consistency.)
- Add to a bowl with the oil, vinegar and salt and whisk to combine.
- Taste and add more salt if needed.
- To allow the flavors to marry together, allow to sit in the fridge for 2 hours.
- Store in the refrigerator covered for up to 15 days.
Notes
Can be enjoyed right away but letting sit for a few hours tastes even better.
