Fruit Kebabs Served in Frozen Grapefruit Bowls

Fruits may not always be in season but, being healthy is. Most kids love eating fresh fruit while others may need a bit of encouragement. If you’re one of the people that has a problem with picky eaters at your home here’s a trick. Skewer it, “mini” it or dip it to change their minds. While these mini fruit skewers will be enjoyed by kids and adults alike, I’m shouting out the kids today.

You can see how this recipe can be easily adopted to include any fruits you like. For these skewers I used strawberries, bananas and blueberries. You can serve these on a plate with some dips and toppings alongside. Really simple and easy.

I decided to amp up the charm by using some hollowed grapefruits as the “bowls”. After scraping out the pulp with a spoon, the grapefruit skins were placed in a freezer and left to harden at least 6 hours.

Who knew? Grapefruit skins make the perfect serving bowls. As toppings for the fruit skewers I used non-fructose chocolate syrup as the “glue” and then let the kids go at it with rolling it in toppings like grated coconut and chopped nuts. But don’t stop there, this is a chance to let your imagination go wild.

Vanilla coconut yogurt, honey and chopped dried fruit would also be good.

Using mini skewers keeps this fruity dessert bite sized.

I love adding “pops” of color to whatever I’m serving. In this case, a bed of tasty greens is a perfect contrast and visually appealing as well.

I bet you won’t want to serve a boring plate of fruit at your house again. Well…maybe you’ll want to but, the kids won’t let you after they experience this.

Fruit Kebabs Served in Frozen Grapefruit Bowls

A unique spin on fruit salad. Kids can’t get enough of fruit on a stick, especially when it’s served in grapefruit bowls with delicious toppings like chocolate and coconut.

Ingredients

Scale

1 banana sliced

1/2 pint strawberries

blueberries

hallowed frozen grapefruit skins (if making grapefruit bowls for serving)

*Toppings (varied)

chocolate syrup

grated coconut

chopped nuts

honey

coconut yogurt

Instructions

Cut grapefruit in half

Scoop out pulp (to enjoy later)

Put grapefruit skins in freezer (at least 6 hours) unitil hard

Remove green from strawberries.

Slice banana.

Slide strawberry on skewer, followed by banana and top with blueberry.

You can then freeze the skewers to enjoy later or proceed to roll in sticky topping (like honey, chocolate or yogurt).

Next roll in dry toppings (nuts, coconut, dried fruit)
