I love a good pancake recipe. That’s why I spent so much time developing this one. Now, I know that you’ve seen other pancake recipes like, lemon poppy seed pancakes, or perhaps tried them at your favorite restaurant. What makes this pancake recipe different is it’s made with the goodness of einkorn flour, crisp poppy seeds and tucked between fresh slices of citrus. 

This is a wonderful recipe to make with kids.

Poppy seeds are filled with health benefits. They are a good source of dietary fiber, antioxidants, and minerals. Poppy seeds have compounds that help to reduce pain known as opioid alkaloids. These compounds are also relaxing and sleep inducing.

When to Make These Delicious Einkorn Poppy Seed Pancakes

Do you really need a reason to eat pancakes? Especially when pancakes are made with the right healthy ingredients, pancakes can be enjoyed for breakfast, lunch or dinner as part of a diverse functional foods diet. 

But just in case, here are some suggestions on when to enjoy these pancakes. Make these pancakes on weekends, special occasion breakfasts (like Mother’s Day, Father’s Day or a birthday). Also try making these pancakes for Strove Tuesday, also known as Pancake Day. They are a great option for the entire family. 

Here’s what you’ll need to make them.

Ingredients 

Wet Ingredients 

  • eggs – at room temperature 
  • kefir or yogurt –  Either kefir and yogurt work really well. Whether you use kefir or yogurt, real food, raw and whole milk unsweetened kefir or yogurt are recommended. You can use homemade or store bought. If you prefer, you can also use whole milk. The pancakes will have less of a “zing”, if you use milk. Almond milk or coconut milk is also an option for those that don’t have access to quality, honest dairy or are dairy free. 
  • maple syrup or honey for serving  
  • unsalted butter (melted butter, divided into two portions

Dry Ingredients 

  • sucanat or other raw sugar – Other raw sugar options include demerara, coconut sugar and muscovado 
  • all purpose einkorn flour – Einkorn wheat flour is more nutrient dense than modern wheat and is the most ancient wheat. Many people that are gluten intolerant, have found that they can tolerate einkorn. This is the brand of einkorn flour that I used. You can also try sprouted einkorn flour for more nutritional benefit.
  • baking powder 
  • salt – unrefined salt 
  • orange and lemon slices -Sliced thinly. This really give the pancakes a great flavor. 
  • poppy seeds – adds a nice bite

​Directions 

Step 1: In a large bowl, whisk together eggs, half the melted butter, sugar and a pinch of salt 

Step 2: Add the yogurt or kefir and mix well 

Step 3: In a separate bowl, whisk together the einkorn flour and baking powder. 

Step 4: Pour the dry ingredients into the bowl with the wet ingredients. 

Step 5: Gently stir until combined. Avoid overmixing. 

Step 6: Add the poppy seeds and let the batter sit for 5 minutes while preheating the skillet. 

Step 7: Heat a skillet or griddle over medium heat and lightly grease with the remaining butter. 

Step 8: Pour 1/4 cup of batter onto the preheated skillet for each pancake. 

Step 9: Form into a round shape. You can use a spoon to help things come together a bit. 

Step 10:  Cook for 2-3 minutes or until bubbles form on the surface and the edges start to set. 

Step 11: Flip and cook for another 1-2 minutes. 

Step 12: The color should be golden brown. 

Step 13: Stack the pancakes and top with orange and lemon slices. 

Step 14: Drizzle with honey or maple syrup. 

Serving Suggestions

These pancakes pair well with maple glaze bacon roses.

Notes and Recipe Variations 

  • ​For even more citrus flavor, try adding some lemon zest to the batter. 
  • If you like chocolate, you can try swapping out the poppy seeds for chocolate chips. 
  • Feel free to top with whatever fresh produce you like. 
  • Can use kefir, yogurt or milk. Keep in mind that you may have to adjust the flour and liquid measurements depending on what you use.

Storage 

  • Store in an airtight container between pieces of wax or parchment paper in the refrigerator for 2-3 days.  
  • For longer storage you can store in the freezer, in a freezer-safe container, for 1-2 months.
