Ancient Grain: When it comes to waffles, einkorn waffles are in a league of their own. Those unique properties are what make them special and a favorite among many. First einkorn is an ancient grain that has been around since the beginning of time. As a matter of fact, other wheat, including ancient varieties like spelt and durum came from einkorn berries.
Gluten Sensitivity: Einkorn wheat is pretty special due to the fact that it’s weaker gluten structure is more easily digested. This characteristic is optimal for people with gluten sensitivities.
Nutrient Content: When compared to waffles made with modern wheat, there is absolutely no comparison. Homemade waffles made with einkorn flour have more nutrients: like beta carotene, protein, b-vitamins and antioxidants.
In addition, unlike modern wheat, einkorn wheat has not been genetically altered in any way. While einkorn does contain gluten, that gluten is of a weaker variety making it easier to digest.

- all purpose einkorn flour (I used this brand of einkorn flour, but you could also use this one)
- eggs (beaten)
- whole milk (I prefer raw milk, due it’s quality and nutrient density. You can read more about ancient foods and their value here).
- coconut sugar or sucanat sugar
- baking powder
- coconut oil
- apple cider vinegar
- vanilla extract
- cinnamon
- salt
Directions
Step 1: Preheat waffle iron.
Step 2: Mix all dry ingredients in a large bowl.
Step 3: To beaten eggs (in a small bowl) add coconut oil, vanilla extract and apple cider vinegar.
Step 4: Add wet ingredients to dry ingredients.
Step 5: Spray preheated waffle iron with coconut oil spray.
Step 6: Pour waffle batter into hot waffle iron.
Step 7: Cook until golden brown (per waffle iron’s instructions)
Step 8: Drizzle with maple syrup or cinnamon honey.
How to Freeze Leftover Einkorn Cinnamon Waffles
- Let the waffles cool.
- Wrap leftover waffles in waxed paper.
- Place “wrapped” waffles into a freezer-safe bag and place in the freezer for up to 3 months.

Tips and Tricks (For Best Results)
Spray both sides of waffle iron with coconut oil spray to avoid sticking.
Make sure that waffle iron is preheated before use.
You can substitute the whole milk with any milk you would like. However, I do recommend using raw milk for better nutrition and best results. This is a health and wellness blog, by the way.
