What Is Einkorn Flour?

Einkorn wheat flour is an ancient grain made from einkorn berries. These berries have been around since the beginning of time. Like modern wheat, einkorn berries are milled into versatile flour that can be utilized in lots of dishes.

You may not have heard of einkorn due to popularity of more modern varieties of wheat like spelt, durum and of course modern wheat.  But, that’s why I’m here. I want to revitalize home cooking into food that revitalizes, nourishes and heals.

Einkorn flour has less gluten content than modern wheat, which makes it easier to digest. This is a bonus for anyone that may have gluten sensitivity.

In addition, einkorn contains more fiber, extra protein and serious antioxidants. Just look at magnesium for example, einkorn flour contains 25% more magnesium than wheat. For this reason, einkorn is one of my preferred flours when making wholesome and nutritionally dense recipes. 

What Are Einkorn Pancakes?

Einkorn pancakes are pancakes made from einkorn flour. This recipe calls for all purpose einkorn flour. This is not the recipe where you want to grind your own einkorn flour. It just won’t turn out the same. Einkorn flour is also packed with more nutrition than a classic pancake recipe. Due to the lower gluten content in the pancakes, digestive upset is a non issue. 

Due to the lower gluten content and higher amount of protein compared to regular flour, these pancakes are slightly less fluffy than a traditional pancake recipe. But don’t worry, I have a tip for that in the recipe card below. Regardless, the flavor and nutrients are through the roof. That’s why I’m delighted to share this new recipe with you. 

Benefits of Making Einkorn Chocolate Pancakes

Not Too Sweet – If you think that these pancakes are overly sweet, you’re wrong. Einkorn chocolate pancakes have a slight nutty flavor and contain the perfect balance of sweetness. If you opt for using dark chocolate chips, that will help keep things on the healthier/less sweet side.

Wholesome Ingredients – There is nothing yucky here. This healthy pancake recipe is made with simple ingredients. Get a closer look at the ingredients further below. 

Impressive – C’mon, how can you look at these pancakes and not be impressed? These are not your regular pancakes at all. Call you grandkids and ask them to come over.

When To Make These Healthy Chocolate Pancakes

Einkorn chocolate pancakes are the perfect special occasion breakfast treat. Not, only are these special occasion pancakes, but these are healthy chocolate pancakes. Serve them for a healthy Valentine’s Day breakfast, a special birthday breakfast, on Saturday mornings or any day of the week. These are not your average pancake recipe. They are not too sweet and a chocolate lover’s dream.

Equipment

Ingredients

(pancake batter) 

  • einkorn all purpose flour – There are different brands of einkorn flour out there, I use this brand often with great results . Check your local grocery store and see what they have.
  • unsweetened cacao powder – naturally full of antioxidants 
  • coconut sugar or sucanat sugar – unrefined natural raw sugar 
  • plain full fat yogurt or kefir
  • pasture raised eggs
  • melted butter – If you’re cooking for health as well as flavor, use pasture raised grass-fed butter every time. 
  • baking soda
  • salt
  • butter or coconut oil for pan/griddle

(chocolate glaze)

  • dark or semi-sweet chocolate chunks or chips 
  • coconut butter – provides a smoother, creamier texture than using plain coconut oil 

Favorite Toppings

  • fresh fruit (like berries) for serving 
  • chocolate chips 

Directions  

Step 1: Whisk the eggs and melted butter in a large bowl. Add yogurt and baking soda. Mix well until the ingredients are well combined. 

Step 2: Combine the einkorn flour, cocoa powder, sugar and salt in a separate bowl. 

Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. You want to retain as much air in the batter as possible to get lighter, fluffier pancakes. 

Step 4: Let the mixture rest for 5-10 minutes. 

Step 5: Heat a stainless steel skillet, cast iron skillet or griddle over medium heat and lightly grease with butter or coconut oil. For best results, if you get a little too much oil in the pan, be sure to wipe the excess with paper towel. 

Step 6: Pour 1/4 cup of batter into the skillet for each pancake. 

Step 7: Cook until bubbles form on the surface and the edges begin to set. This should about 2-3 minutes. Flip and cook for another 1-2 minutes until cooked all the way through. 

Step 8: Transfer to a plate (lightly covered) to keep warm and start the glaze. 

Directions for the Glaze

  • Place the coconut butter and chocolate chips in a double boiler on low heat. 
  • Stir until it is all melted and smooth. 
  • Drizzle over your delicious pancakes. Usually I would say to top your pancakes with pure maple syrup, but there is no need. These pancakes are sweet enough.

Serving Suggestions For Chocolate Einkorn Pancakes 

For an easy breakfast, serve these pancakes with your favorite breakfast protein like sausage or bacon and some eggs. 

Leftover Pancake Storage Instructions

Short Term Storage: Cool the pancakes completely. Store them in between pieces of wax paper in an airtight container (on the counter) for 1-2 days. 

Longer Storage: Stack pancakes in a flat layer between pieces of parchment paper and store in a freezer bag. Remove as much air as you can. Freeze for 2-3 months. 

What To Do With Leftover Chocolate Glaze

If you have any leftover chocolate glaze (you probably will unless you are a serious chocoholic -I’ll pray for you by the way), you will happy to know that any leftover chocolate glaze can be used as a fruit dip).

Just re-warm the chocolate sauce in a double boiler or place any remaining sauce in a container over some warm water. You’re welcome.

How to Turn Einkorn Chocolate Pancakes Into Einkorn Waffles

​You can try using this same batter to make einkorn waffles. Here’s how. 

  1. Add 1-2 tbsp of coconut oil to the pancake batter. This will lend a crispier texture to the waffles. 
  2. Try adding 2 tbsp of coconut sugar to the batter to give the batter a little more sweetness and to facilitate browning. 
  3. Experiment by adding a little more einkorn flour or reducing the liquid to get a slightly thicker batter.

  • 1 cup einkorn all purpose flour

  • 4 tablespoons sucanat sugar
  • 3 large eggs
  • 1 cup full fat plain yogurt
  • 3 tbsp melted butter
  • 1 tsp baking soda
  • 1 pinch of salt

Chocolate Glaze

  • 1/2 cup dark chocolate or semi-sweet chocolate chips
  • 1/4 cup coconut butter (slightly melted)
