Easy Strawberry Lime Chia Pudding

Strawberry lime chia pudding is a delicious healthy breakfast with a pudding-like consistency that is super easy to make. 

I love chia pudding. It’s an easy breakfast that just about anyone can make and is super easy to customize. Not to mention, once strawberry season rolls around, it’s a great excuse to put strawberries on and in everything. Since you can make this recipe ahead of time, it’s also a perfect option for busy mornings. 

Ingredients in Strawberry Lime Chia Pudding

Here’s what you need for this chia seed pudding recipe. 

Sweet strawberries: Fresh strawberries are highly recommended. You can also use frozen strawberries, just make sure that they’re mostly thawed. 

Coconut milk (or other dairy-free milk): I highly recommended using full-fat coconut milk. Cashew milk or another non-dairy milk can also used. 

Chia seeds: either black or white chia seeds will do 

Pure maple syrup: gives just the right amount of natural sweetness 

lime juice: fresh lime juice is a must 

coconut flakes: feel free to use unsweetened coconut flakes as a garnish 

lime zest: the zest make it zing 

Substitutions and Additions 

Once you have a basic recipe for healthy chia pudding you’re free to customize it as you please. For example, the strawberry puree can be swapped for a myriad of other fruit purees like bananas, blueberries or even mango or guava. 

If you like vanilla, feel free to add 1 tablespoon of vanilla extract. You can also garnish the chia pudding with some extra chia seeds on top.

Just 2.5 tablespoons of chia seeds have five grams of protein and ten grams of fiber respectfully. 

These benefits are helpful in lowering the risk of heart disease, supporting weight loss and flooding the body with needed phytonutrients to limit disease. 

​Health Benefits of Coconut Milk 

While you can use any one of plant-based milks to make this easy strawberry chia pudding, I advocate for using coconut milk in this recipe because it’s a great way to get some healthy fats in your diet. Some of the health benefits of coconut milk include supporting weight loss, supple skin and healthy hair. And believe it or not, even though coconut is rich in fat, those fatty acids also promote heart health.

Try this easy dairy free favorite for strawberry lime chia pudding. It makes the perfect make-ahead treat.

Prep Time 10 minutes
Additional Time 2 hours
Total Time 2 hours 10 minutes

Ingredients

  • 1 1/2 cup coconut milk
  • 1/2 cup chia seeds
  • 2 tbsp maple syrup
  • 2 tsp lime juice
  • 1 tsp lime zest
  • 1 cup fresh strawberries

Instructions

  1. In a medium bowl combine coconut milk, maple syrup and lime zest.
  2. Add the chia seeds and whisk.
  3. Allow to thicken slightly while starting to prepare the strawberries.
  4. Remove the green tops from the strawberries.
  5. Blend the strawberries in a food processor or blender with the lime juice.
  6. Once pureed and chia pudding has thickened some place in individual mason jars.
  7. Spread even amounts of bended strawberries over the top of the chia pudding.
  8. Refrigerate for at least 2 hours or overnight.
  9. Serve with sliced fruit, and coconut flakes as desired.

Notes

Feel to to adjust the maple syrup to your desired sweetness. You could also opt for no maple syrup at all.
