There are different ways to do it and you can even use green cabbage if you’d like. One of the benefits of using purple cabbage is the vibrant color and the natural sweetness that develops once the cabbage is cooked. I find that purple cabbage is a little sweeter than the green variety.

This sweetness is further enhanced with the addition of balsamic vinegar that serves double duty as a flavorful marinade.

Ingredients 

  • red cabbage – red cabbage has a bit more sweetness than green cabbage 
  • olive oil 
  • balsamic vinegar 
  • lime juice or lemon juice 
  • paprika
  • Worcestershire sauce 
  • tamari or traditionally fermented soy sauce 
  • red bell pepper – adds a beautiful color contrast to the red cabbage
  • leeks -make sure to soak, rinse and clean them well
  • salt – use unrefined salt – this is the salt  i use due to minimal processing and the nutrient density 
  • tomato sauce 
  • garlic cloves – be careful not to burn the garlic 
  • chili powder or red pepper flakes 
  • fresh dill 

How To Make Red Baked Cabbage Steaks 

Step 1: Preheat the oven to 400°F. 

Step 2: Remove the worn outer leaves from the cabbage. 

Step 3: Split the cabbage in half. 

Step 4: Cut 1/2 of the cabbage into even 1-inch slices. Try not to damage the core so that the raw cabbage stays together. Depending on the size of the cabbage, you should end up with 6-8 steaks. 

Step 5: Prep the leaks by cutting them in small rounds and putting them to soak in lots of water to remove the dirt and debris. Dry the leeks. 

Step 6: Chop the leeks. 

Step 7: In a small bowl, combine the olive oil, balsamic, lime juice, Worcestershire sauce, tomato sauce, paprika, sea salt and chili powder. Stir the mixture until smooth. Taste the marinade and adjust if needed. 

Step 8; Add the leeks, garlic and chopped red pepper. Stir to distribute. 

Step 9: Line a baking sheet with parchment paper. Evenly place the cabbage on the parchment paper in a single layer. 

Step 10: Pour or brush the marinade onto the cabbage until each piece is thoroughly coasted. Spoon out the leeks, red pepper and garlic if necessary. 

Step 11: Allow the cabbage to marinate for 20 minutes. 

Step 12: Bake the cabbage for 25-30 minutes. Be careful not to burn. This will give you nice crispy roasted cabbage steaks. 

Step 13: Cool the finished cabbage for about 5 minutes, garnish with fresh dill or other fresh herbs of your choosing and then serve.

Store any leftover cabbage in an airtight container for 3-5 days.

Notes

Although this recipe calls for red cabbage, either red cabbage or green cabbage will work. Marinate the cabbage for at least 20 minutes for maximum flavor.
