Golden Cauliflower Rice

This recipe for golden cauliflower rice is a delicious and healthy side dish that pairs well with meat, poultry, fish and more.

Ingredients

  • 1 tbsp olive oil
  • 1 medium cauliflower (broken into florets)
  • 1 tsp turmeric powder
  • 2 carrots (cut into cubes)
  • 1 bunch green onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp ghee

Instructions

  1. Use a food processor to gently pulse the cauliflower into smaller (rice like pieces). Work in small bathes to keep the cauliflower around the same size.
  2. Use a cheese cloth to wring out extra water or other drying method listed above.
  3. Add olive oil to a sauté pan on medium heat.
  4. Add carrots to the pan and sauté until slightly brown.
  5. Add cauliflower, turmeric, salt and pepper.
  6. Keep cooking and mixing until everything looks golden brown.
  7. Stir in the ghee until evenly distributed.
  8. Top with scallions,

  10. Store any leftovers in the refrigerator in a covered container for up to five days.
