Easy Beach Cake

Earth Day is right around the corner and because I grew up in the Caribbean, I always think about our planet’s beaches and sea life. I want our children to grow up and be able to bask in the beauty of nature. In honor of Earth Day, I made this Easy Earth Day Beach Cake.

The truth is, I would not consider myself a baker. So believe me when I say that this cake is super easy to make.

I found the most adorable beach house boxes at Michael’s and they were 50% off. So logically, I decided to bake a cake and put it in one.

Here’s what you’ll need:

For Cake-

1 box yellow cake mix (and of course the ingredients to make it)
1 tub lemon frosting
crushed vanilla wafer cookies
1 bag each Wilton candy melts

Other materials-

Beach box, plate or whatever else you want to put the cake on/in
candy mold
sea turtles and other sea creatures of your choice
aluminum foil
water scrapbook paper

Bake the cake according to package instructions in a 13×9 pan and allow to cool completely.

While the cake is baking prepare candy melts according to instructions. I swirled the brown and white together to add a special touch. Pour into shell candy mold and allow to set in refrigerator.

Cut cake into an appropriate sized square to fit in the box

Line the box with foil and put in cut yellow cake for the beach terrain.

Frost the cake with lemon frosting. Of course, lemon frosting is a must for any beach scene. Sprinkle the top of cake thoroughly with crushed vanilla wafers.

Decorate the cake with finished candy and sea creatures as you wish.

Adding blue green scrapbook paper underneath your beach cake adds a nice touch. beach cake with turtle  800x1200

Feel free to enjoy all the oohs and ahhs. This cake would also be great for summer birthdays, beach days and may make another appearance at my house real soon.

    First of all, what a beautiful cake! That is gorgeous! I would have never thought to put the cake in one of those decorative boxes; that is brilliant.
