About Sloppy Joe Bowls
Contrary to popular belief, sloppy joes can be a delicious and nutritious meal for all to enjoy. I’m not talking about that sloppy joe meat that you plop from a can. I’m talking about a childhood classic that has been reinvented without the bun. Sloppy joe bowls are the perfect option for a weeknight meal. As always this recipe is kitchen tested and wellness mom approved.
Here is what you’ll need.
Ingredients in Sloppy Joe Bowls

- sweet potato rounds
- ground beef (pastured -grass fed, grass finished beef is preferred for most health benefit)
- coleslaw (I use this recipe, just omit the raisins. Use avocado oil mayo to keep it seed oil free)
- pickles – traditionally fermented pickles preferred
- white onion
- garlic
- pickled red onion – if you can’t get pickled red onion, raw red onions work just as well)
- ghee or beef tallow
- tomato sauce
- yellow mustard
- ketchup – for a healthier twist seek out an unsweetened ketchup or one sweetened with honey
- BBQ sauce -homemade or store bought
- cilantro or green onion (for garnish)
Directions
Step 1: Preheat the oven to 400°F and line a baking sheet with parchment paper.
Step 2: Toss the sweet potatoes in ghee and salt on a large sheet pan.

Step 3: Spread out in a single layer and roast for 30 minutes or until tender.
Step 4: While the sweet potatoes are roasting, heat remaining ghee in a large skillet over medium high heat.
Step 5: Add the chopped onion and cook until translucent for about 5 minutes.
Step 6: To the onions add the ground beef and cook until it gets brown. This should take between 7-10 minutes. Drain any excess oil.

Step 7: Stir in the tomato sauce, BBQ sauce, ketchup, mustard and remaining salt.
Step 8: Bring to a simmer and then reduce heat to medium low.
Step 9: Let the mixture simmer for about 10 minutes. Stir intermittently until it gets thick.
Step 10: Divide roasted sweet potatoes and coleslaw between the bowls.
Step 11: Spoon the sloppy joe mixture on top. Add pickles, red onions and fresh cilantro.

Step 12: Feel free to add more of your favorite toppings.
