The best chocolate chip cookies are made when you start with quality ingredients (and for me), when you don’t have to be concerned about those ingredients contributing to inflammation and disease in the body. That being said, make these cookies for bake sales, kids’ school parties, as a wholesome dessert for Valentine’s Day, for Christmas cookies or whenever you’d like a sweet treat.

Ingredients

Wet Ingredients
unsalted butter (softened), can also use coconut oil
* applesauce – I use homemade applesauce. Store bought apple sauce may also be used, but make sure that it is unsweetened.
vanilla extract – adds a smooth flavor.
* If using homemade applesauce add 1-2 tablespoons of milk for a thinner consistency
Dry Ingredients
sucanat sugar – I use unprocessed sugar to make this recipe as wholesome and nutritious as possible. In a pinch, you can also use coconut sugar or brown sugar. But keep in mind that brown sugar is processed sugar.
Einkorn all purpose flour – while there is something called whole grain einkorn flour, for best results, einkorn all purpose flour is highly recommended.
cinnamon – add a warm, slightly spicy flavor and appeal
baking soda – used as a leavening agent.
dark chocolate chunks – for healthy deep chocolate flavor
salt – enhances all the other flavors
Directions
Step 1: Preheat oven to 350°F.
Step 2: Line a 9×13′ baking pan with parchment paper or grease well.
Step 3: In a small bowl, combine flour, cinnamon, baking soda and salt. Stir to evenly distribute and set aside.
Step 4: In a separate bowl combine butter and sucanat sugar.
Step 5: Whisk or beat with a hand mixer until distributed.
Step 6: Add in applesauce and vanilla extract. Beat until fully emulsified.
Step 7: Stir in the flour mixture until fully incorporated. It will be very thick. You can add 1-2 tablespoons of milk if it is still too thick.
Step 8: Fold in the dark chocolate chunks.
Step 9: Scoop the mixture into the baking pan and spread into an even layer. You can also add it in dollops and then spread everything until smooth. If this makes it easier.
(Optional) – You can also top it with a sprinkle of flaky sea salt before baking for a pop of extra flavor.
Step 10: Bake for 21-25 minutes until golden brown and slightly puffed up. For a crispier cookie, bake longer. If you prefer a more gooey or softer cookie, bake it for closer to 21 minutes.
Step 11: Remove from oven and cool for 30 minutes before butting into 24 bars and enjoying.

If you have leftover cookies here’s how to store them.
- Cool completely.
- Place in an airtight container.
- If stacking, put in between pieces of parchment paper.
- Store at room temperature for 3-4 days.
