Once the eggnog starts making the rounds it’s official, the holiday season is here. And while you can buy eggnog from the store, why would you when homemade eggnog super nutritious and so easy to make at home? You just need a few ingredients to make it happen.

Why Raw Eggnog

Contrary to what you may have heard, traditional eggnog can be a pretty nourishing beverage. Just how nourishing it is comes down to a few things. How much sweetener has been added, the type of sugar that has been added and exactly where the ingredients came from.

This is especially the case with simple recipes like this one. If you’d like to make this homemade eggnog recipe the traditional way, using only raw ingredients,  all dairy (and eggs) should be from a pasture raised source that you trust. 

Ancient foods like fresh raw egg yolks and raw whole milk have nourished people for thousands of years. And there are benefits to eating certain foods raw for maximum absorption, vitamin assimilation and optimal digestibility.

Please note that the FDA advises against the ingestion of raw egg yolks use due to the risk of food borne illness. That risk is low (even lower than commercial eggs and dairy) especially in pasture raised products. Raw egg yolks are used in everything from classic Caesar dressing, ice cream and milkshakes.

About This Recipe

Most store bought eggnog is loaded with refined sugars. Literally, I was walking down the grocery aisles recently and couldn’t believe all the ingredients! Often there is more sugar added to commercial eggnog than is actually needed.

You may also find artificial flavors and high fructose corn syrup hiding inside those pretty eggnog cartons. In the recipe below, is a family friendly, non-alcoholic version of my creamy homemade eggnog sweetened with the goodness of natural maple syrup. 

It’s important especially for a recipe like this one, to source your milk and cream from a local farm that you trust. In addition, since this raw eggnog recipe uses real ingredients like raw heavy cream and egg yolks, the end result is creamy and thick. You won’t have to worry about thickeners and stabilizers like guar gum that is notorious for causing stomach irritation and nutrient deficiencies.  

When to Make Raw Eggnog

Once the Christmas holiday season rolls around it’s a good time to make this classic eggnog recipe. Make this traditional holiday classic all during the holiday season – for Christmas Eve and Christmas.

Ingredients in Traditional Raw Eggnog

Ingredients in raw eggnog
  • whole milk – for the most nutrient dense option, source your raw milk from a reliable source  Use a small farm that you can trust.
  • raw cream – using raw heavy cream, gives a creamy rich result 
  • cinnamon – adds great warmth and holiday flavor
  • raw egg yolks – separate egg yolks from egg whites 
  • ground nutmeg – using freshly grated nutmeg makes all the difference 
  • vanilla extract – gives a pleasant flavor to the eggnog 
  • maple syrup or raw honey –  to add a bit of natural sweetness. 
  • sea salt – adding a pinch of salt makes this recipe taste even better

Directions For Making Traditional Raw Milk Eggnog

Step 1: If you haven’t already, separate the egg yolks from eggs whites using clean hands or an egg separator. 

Step 2: Mix the egg yolks )using a stand mixer) for about 2-3 minutes. It will become lighter in color and thicken up a bit.

Step 3: Add with maple syrup. 

Step 4: Gently stir in milk, cream, vanilla, nutmeg, cinnamon and sea salt. 

Step 5: Chill the eggnog for a minimum of 3 hours (up to overnight) for the best flavor. 

Step 6: Optional: Garnish with cinnamon sticks, raw whipped heavy cream and more freshly grated nutmeg. 

Directions For Making Cooked Eggnog

Prepare the Milk and Spice Mixture

Step 1: In a medium saucepan combine the milk, cream, nutmeg, cinnamon, salt and half of the maple syrup. 

Step 2: Stir well and heat over medium-low making sure that it doesn’t boil. 

Step 3: You want to dissolve the maple syrup and spices without boiling or scalding the milk. 

Beat the Egg Yolks

Step 4: In a small bowl add the egg yolks and the rest of the maple syrup. 

Step 5: Whisk using an electric mixer or by hand until the mixture is light and fluffy. This should take between 2-3 minutes.

Temper the Egg Yolks

Step 6: Slowly add a small amount of the warmed milk over the egg mixture to temper eggs. You want avoid curdling of the eggs. 

Step 7: Gradually add the remaining of the warm milk mixture and fold to combine. 

Step 8: Add vanilla extract. 

Step 9: Allow to cool completely before chilling in the refrigerator. 

How Long Does Non-Alcoholic Raw Eggnog Last

Non-alcoholic eggnog should be refrigerated  and enjoyed in one day. 

Tips and Tricks

Creamy Eggnog: If you’d like a thicker eggnog, add more egg yolks to the recipe. 

Leftovers: If there is any extra eggnog after a day or two, try putting into an ice cream machine to make eggnog ice cream.

    1/3 cup maple syrup
  • By hand, fold in milk, cream, vanilla, nutmeg, cinnamon, and sea salt.
    1 cup heavy cream, 2 cups milk, 1 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp vanilla extract
  • Chill the eggnog for a minimum of 3 hours (up to overnight) for best flavor.
  • Optional – Garnish with cinnamon sticks, raw whipped heavy cream, and more freshly grated nutmeg.
