The frozen and refrigerated sections of the grocery store are a great place where passion, creativity and great tastes collide. With the freezer section alone comprising of over 3700 selections, it’s a great time to get creative in the kitchen. From ethnic foods, to pizzas to yogurt and desserts, no one has to feel left out.
That being said, I had some time to get creative in the kitchen recently and came up with a perfect bite-sized treat for the holiday season.
Oh and did I mention that you can “wow” your guests in less than 15 minutes with this recipe? Oh Yeah!

Ingredients
mini fillo dough shells (from frozen section)
Peppermint ice cream (these are limited edition for the holidays I used the Friendly’s brand but Edy’s has one as well)
Chocolate syrup
whipped cream
fresh mint
Directions
Put fillo shells in preheated 350 degree oven for 3 minutes. (The fillo dough is already cooked but this step is to ensure extra crispiness)
While shells are in oven, remove ice cream from freezer to soften a little
Once fillo is finished, remove from heat and allow to cool for 1-2 minutes. This part should not take long
Use a teaspoon and carefully place rounded ice cream into fillo shells. The shell is quite fragile, so be careful
Drizzle each bite with chocolate syrup, add a little whipped cream and top with fresh mint
The Friendly’s brand of peppermint ice cream has bits of actual peppermint candy in it which I truly appreciate. You get the crunchiness of the fillo shell, the cool sweetness of the ice cream , and the crunchy “mintiness” of the peppermint. It’s a win, win, win! Place the prepared Chocolate Peppermint Ice cream bites in the freezer for about 10 minutes before enjoying or serving to guests.

We made peppermint ice cream at the beginning of this week (which was sadly gone in two days), but I have been thinking about this post ever since I saw it! These look amazing. Such a fun idea!

I am still stuck at the “made peppermint ice cream part”. That must have been so delicious! I have not made homemade ice cream yet. I am kind of scared that if I start making homemade ice cream then I won’t be able to stop! I even started an ice cream Pinterest board recently. Yep…I am a hopeless ice cream fan. 😉
